Desserts in a jar are very trendy at the moment and are great for a personalised gift idea or to make for parties. I brought a pack of 12 jars from Wilkinson's for £3, and they fit 190ml. I made 6 cheesecakes with the following ingredients. (The amount of ingredients you need will depend on how many jars you plan to make.)
Ingredients:
250g pack of digestive biscuits
75g of unsalted butter
500g of Mascarpone cheese
140g of Icing Sugar
Extras: Sprinkles of dark chocolate and a drop of lemon to the topping
To make:
1. For the base, break up the digestive biscuits by crushing them in a bowl until fine.
2. Melt the butter in the microwave, and pour into the biscuit crumbs and mix until its all covered.
3. Spoon the base into the jar and flatten with a spoon.
4. Whip together the mascarpone cheese (and a few drops of lemon if preferred) and icing sugar and layer on-top of the biscuit base.
5. Sprinkle dark chocolate or your choice of topping to finish.
